Eggs are quietly becoming optional in South Island bakeries. Foodstuffs South Island, NZ is trialling Leaf Rubisco Protein as an egg replacement across more than 200 New World, PAK’nSAVE and Four Square stores, marking the first major retail test for the Canterbury-based ingredient maker Leaft Foods. Cakes, muffins and fresh bakery staples are the proving ground, exactly where eggs normally do the heavy lifting on structure, binding and lift.

Kiwi, Leaft Foods has taken its green-tech know-how beyond the human plate and straight into the pet bowl. The Rolleston-based startup, best known for pioneering Rubisco extraction for human nutrition, has now applied its leaf-protein technology to create Alfalfa Protein Concentrate (APC), a nutrient-dense ingredient designed specifically for pet food.

New Zealand’s green-leaf disruptor, Leaft Foods, is stepping firmly into Asia with a strategic partnership alongside Tokyo-based Lacto Japan. At the heart of this move is Rubisco Protein Isolate, a leaf-derived protein boasting an amino acid profile superior to dairy whey, coupled with the functionality to replace eggs, emulsifiers, and synthetic binders in everyday foods.
