Australia’s mushroom meat darling Fable Food Co. has scored another big win in the fast-casual space. Its smoky, rich pulled shiitake has just landed in Zambrero’s Signature Burrito, rolled out across nearly 300 restaurants nationwide. Paired with the chain’s limited-time Truffelo Sauce, the burrito is loaded with mushrooms, veggies, corn, pepitas, and serious flavour.


This comes hot on the heels of Guzman y Gomez reintroducing Fable’s pulled mushrooms across its ~186 outlets earlier this year after “overwhelming demand.” Together, the two biggest Mexican chains in Australia are now serving mushrooms as a mainstream meat alternative proving consumers don’t just want “fake meat,” they want bold, tasty, plant-forward flavour.


For Fable, this isn’t just a menu slot, it’s a strategic foothold. By turning mushrooms into a craveable burrito filling, the company is pushing alt-protein deeper into everyday QSR culture.
