Next-Gen Proteins From Fungi to Microalgae, 2026 Gets Real

Next-Gen Proteins 2026 visual media

Next-gen proteins are shifting from hype to habit. Mintel’s 2026 outlook says consumers are moving beyond “maxxing” single macros to diverse, functional diets - think fungi, microalgae, mung bean and hemp - folded into everyday eating alongside fibre-as-armour and microbiome-friendly formats. In short, protein and fibre go mainstream, variety becomes the new virtue, and APAC’s naturally fibre-rich cuisines start teaching the West a few tricks.

For brands, the win is function + affordability + cool factor. Black Swan’s sentiment shows rising chatter for chlorella (microalgae), hemp seeds and mung bean, while consumers still want indulgence (crunchy, gooey, fun) with gut-brain benefits. Translation looks like high-protein isn’t just for gym bros; fibre isn’t just for grandparents; and a “diverse pantry” beats a single hero ingredient.

Layer in two companion shifts: Retro Rejuvenation (heritage ingredients, preserved formats, circular “resourceful” thinking) and intentionally sensory (texture, aroma, smaller portions that still satisfy which is relevant to GLP-1 users, older adults and neurodiverse eaters). Put together, that’s a playbook for next-gen proteins feeling familiar, eat beautifully and travel well across price points.
