US, Whole Foods Market’s 2026 food trends list has dropped and it’s all about texture, gut talk, and grandma’s fats making a comeback.


The Amazon-owned retailer reckons beef tallow is back on the stove, replacing the “seed oil villains” in everything from fries to pastries. Fibre is heading for its biggest glow-up yet, sneaking into crackers, bars, and even pasta as gut health moves from niche to normal. And then there’s vinegar, the new old-school flavour hack, now strutting into mocktails, marinades, and functional tonics.


Meanwhile, sugar’s had a personality transplant. Brands are ditching synthetic sweeteners for fruit, honey, and maple to keep it clean but not clinical. Instant food gets a prestige makeover (hello, single-serve lattes and “freezer fine dining”), while 2026 will also shine a light on women farmers, with the UN officially dubbing it their year. From fats to fermentation, next year’s flavour map is comfort with credentials.
