UK’s First Commercially Grown Ginger Takes Root in Hydroponic Tunnels

Alastair Hawken, founder of Hawkens Gingerbread in Grantham, has pioneered the UK’s first commercial grown ginger cultivation using hydroponic polytunnels. Inspired during Nottingham Trent University’s Help to Grow: Management Course, Alastair conceived a soil‑free flood‑and‑drain system to enable ginger production under controlled tropical conditions (25–30 °C and ~85% humidity), countering the UK's unsuitable climate for the crop. This breakthrough could reduce import dependency and cut the associated 38 tonnes of CO₂ greenhouse gas emissions.


Grantham Gingerbread

Following a successful pilot crop destined for the UK’s first fully homegrown gingerbread, Alastair is expanding into turmeric cultivation and exploring UK-native flavor profiles. Strategic partnerships are already in motion—a six-figure supply deal with TJX will see Hawkens Gingerbread distributed across North America and Australia by September. Supported by the Help to Grow: Management Course, this venture underscores how innovation and entrepreneurial vision can transform the £54M spice market while championing sustainability.
