Anuga 2025 didn’t just fill the halls of Cologne this year, it rewrote the playbook for how food, politics, and innovation intersect. With over 145,000 visitors from 190 countries and 8,000+ exhibitors spanning every major food system on Earth, this year’s show became the de facto UN of flavour, science, and commerce. The numbers alone tell a story: a 3.6% rise in attendance, a 94% share of foreign exhibitors, and a pulse confirming food is still the most powerful common language we have.



But it was the content defining the moment. On the Anuga HORIZON stage, thought-leaders like Redefine Meat’s Edwin Bark and Novameat’s Dr. Giuseppe Scionti reframed what protein means, while Anuga Alternatives made its debut as a dedicated hub for fermentation, mycelium, hybrid meats and future fats. Korea, this year’s partner country, spiced the agenda with a masterclass in “Flavour Meets Trends” , from kimchi and gochujang to cutting-edge K-food tech, its presence embodied the balance between heritage and innovation clearly defining 2025’s food zeitgeist.


Beyond the business cards and tasting spoons, Anuga 2025 showed us the future isn’t hypothetical, it’s operational. Food is now the hinge between diplomacy and data, culture and climate, health and habit. Whether it’s EU ministers debating organic regulation or supermarket giants like Tesco, Costco and Woolworths shopping for the next shelf disruptor, the signal is the same: the global food system has officially entered its next chapter — smarter, cleaner, and more connected than ever.
