From Apricot Stone to Protein- Food Waste Finds a New Life

For decades, the stone or kernel hidden inside an apricot stone has had a rather complicated reputation. Now Austrian food-tech company Revo Foods is turning this unlikely raw material into a fermented, high-protein food headed for supermarket shelves.


Most of us eat the apricot and throw away the stone. Multiply that across the juice, jam and dried-fruit industries and significant quantities of apricot kernels become a processing side-stream, commonly discarded or incinerated.


Revo Foods sees food instead.

The Vienna-based company has launched Cottage Protein+, a refrigerated cottage-cheese-style product made with 40% sweet apricot kernels, water, salt and fermentation cultures. A 150g pot provides 17.2g of protein, with fermentation producing the characteristic acidity, flavour and lightly grainy texture rather than relying on the starches, thickeners and tropical fats commonly found in plant-based dairy alternatives. The product is rolling into EDEKA and REWE stores in Germany this month.


There is another nutritional twist. The fat occurs naturally in the kernels rather than being added separately, and Revo says the kernels provide an oleic-acid-rich fat profile comparable in composition to olive oil. Its retail formulation lists 11.5g protein, 18.9g fat and just 1.5g carbohydrate per 100g.


An Ingredient With a Curious History

Apricot kernels aren't newcomers to the food and health conversation.

They naturally contain amygdalin, a cyanogenic compound that became famous last century through Laetrile, sometimes incorrectly called “vitamin B17”. Laetrile was heavily promoted during the 1970s as an alternative cancer treatment.


The claims became enormously controversial. The US National Cancer Institute says laboratory and clinical evidence ultimately failed to establish Laetrile as an effective cancer treatment, while amygdalin can release cyanide when consumed and therefore presents a potentially serious toxicity risk. A Cochrane review similarly found no reliable clinical evidence supporting the claimed cancer-curing effects.

That distinction is important in the Revo story.


Cottage Protein+ is not being promoted for medicinal purposes. It is a processed food made from sweet apricot kernels. Raw apricot kernels require careful management because of their naturally occurring amygdalin; New Zealand's Ministry for Primary Industries, for example, prohibits the retail sale of raw apricot kernels while permitting their use as ingredients where the finished food is safe.


The historical connection nevertheless illustrates something fascinating about food innovation: the same biological material can move through very different periods of human understanding and application.

SIGNAL - Waste streams are becoming ingredient streams

The important story isn't really vegan cottage cheese.

It is what Revo has done with the apricot stone.


Fruit processors already grow, harvest and transport the apricot for another purpose. The kernel therefore potentially represents a source of protein and fat that doesn't require another crop to be planted specifically to produce it. Revo says kernels generated by jam, juice and dried-fruit production are frequently discarded or incinerated.


This is food upcycling moving beyond flour, fibre and snack ingredients into primary protein production.

Fruit → processing → kernel side-stream → fermentation → protein food.

That pathway is worth watching.


HUMAN FACTOR - Consumers don't eat technology

Revo may also have recognised something the first generation of alternative-protein companies sometimes missed.

Consumers don't necessarily want a lesson in food technology. They want food that tastes good, has useful nutrition and contains ingredients they can understand.


Cottage Protein+ has an unusually short ingredient story: apricot kernels, water, salt and cultures, with chives in the retail version. Fermentation does much of the work normally performed by formulation additives.

There is also immediate consumer recognition in the 17.2g protein per pot proposition.


Revo says that in its own blind tasting, 60% of participants preferred the apricot-kernel product to dairy cottage cheese. That is a company-generated result rather than independent consumer research, but if replicated at retail it would matter considerably.

LONG PLAY - Look inside the waste bin

Apricot kernels may ultimately be less important than the principle they represent.

Every large food-processing industry generates biological side-streams: fruit stones, seeds, skins, pomace, bran, spent grain, oilseed residues and vegetable trimmings.

What molecules are still inside them?

Protein. Oils. Fibre. Polyphenols. Flavour compounds. Functional ingredients.

Fermentation adds another dimension because microorganisms can help transform unconventional raw materials into foods with different flavour, texture and nutritional characteristics.


For food manufacturers, particularly those operating close to large agricultural processing industries, the opportunity may therefore be sitting beside the production line rather than growing in another paddock.
