Three companies - Not Coffee, Hillston Black Garlic, and The Gut Comfort Company - are shaping a distinctly down-to-earth version of “Future Food” and are part of the 2025 Woolworths backed Seedlab cohort. They’re tapping natural fermentation, caffeine-free alternatives, and gut-friendly native fruits to meet growing consumer demand for calm energy, microbiome health, and clean-label functionals.


This new wellness front isn’t about meat replacement, it’s about mood, digestion, and slow-release vitality. A quieter, more grounded future food movement is taking root in the Antipodes, with black garlic as its savoury core and kiwifruit its bright green halo.
