The Alt.Protein 25 Conference has just wrapped up in Sydney, Australia. Definite trends have emerged showing a clear move from planet-saving branding rhetoric to pragmatic innovation, where health, taste, and trust now drive the next phase of the NextGen Food future.


Across the sessions, the message was unmistakable: “alternative” is out, and “next gen” is in. From cultivated fats to algae proteins, the talk moved beyond virtue to commercial viability indicating flavour, function, and fiscal discipline. The room buzzed less with idealism and more with survival energy as founders spoke like engineers and investors like realists.


The unthinkable now feels ordinary with a world where consumers care less about the cow and more about cholesterol. As GLP-1 diets, omega-rich fats, and blended meats take centre stage, the NextGen Food story isn’t about imitation, it’s about integration.
