Forget meat and three veg. This new culinary vision takes climate data, crop science, and AI smarts, blending them into a future-forward menu that reads like Blade Runner meets Bake Off. At the core is a fundamental rethink: how do we eat in a world reshaped by heatwaves, food insecurity, and shifting soil patterns?


According to the forecast, aubergines, soybeans, and chickpeas could replace classic UK staples, thanks to their drought tolerance and rising suitability in northern latitudes. Even Scandinavia could be growing soy. Expect to see ancestral grains like buckwheat and sorghum back on trend, while seaweed noodles might just become the new spaghetti.
