Sweet Potato are jammed packed with great nutrition. A sure winner with friends and family.

Ingredients
For the Sweet Potatoes:
- 2 medium sweet potatoes, peeled and cut into small cubes 
- 1 tablespoon olive oil 
- 1 teaspoon chili powder 
- 1/2 teaspoon smoked paprika 
- Salt and pepper, to taste 
For the Black Beans
- 1 can black beans, drained and rinsed 
- 1/2 teaspoon ground cumin 
- 1/4 teaspoon garlic powder 
- Salt and pepper, to taste 
For the Tacos
- 8 small corn tortillas 
- 1 avocado, sliced 
- 1/4 cup fresh cilantro, chopped 
- Salsa or hot sauce, for serving 
Preparation
- Preheat the oven to 400°F (200°C). 
- In a bowl, toss the sweet potato cubes with olive oil, chili powder, smoked paprika, salt, and pepper. Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized. 
- In a small saucepan, combine the black beans with cumin, garlic powder, salt, and pepper. Heat over medium heat until the beans are heated through. 
- Warm the tortillas in a pan over medium-high heat or in the microwave. 
- Assemble the tacos by placing a spoonful of black beans on each tortilla, followed by a few pieces of roasted sweet potatoes, sliced avocado, and chopped cilantro. 
- Serve with your favorite salsa or hot sauce.
