Enjoy This Easy To Prepare & Tasty High Plant Protein Dish
Ingredients
1 tablespoon of oil
1 onion, chopped
3 garlic cloves, minced
1-tablespoon grated ginger
1-tablespoon curry powder
1-tsp ground cumin
1/2-tsp ground coriander
1/4-tsp cayenne pepper (optional)
2 cans cooked chick[eas, drained & rinsed
1 can diced tomatoes
1 can coconut milk
Salt & pepper to taste
Fresh cilantro (coriander) - optional
Preparation
Heat the olive oil in a large saucepan or Dutch oven over medium heat.
Add the onion and cook until softened, about 5-minutes
Add the garlic and ginger and cook for 1-minute until fragrant
Add the curry powder, cumin, coriander and cayenne (if using) and cook for 1-minute
Add the chickpeas, tomatoes and coconut milk. Bring yo a simmer and let cook for 10-15 minutes until flavours have melded together and the sauce has thickened
Season with salt and pepper to taste
Serve over rice or Naan bread and top with the frsh cilantro (coriander) if desired.
