Veggie Burger with Roasted Sweet Potato Wedges

Enjoy these delicious and healthy Veggie Burger with Roasted Sweet Potato Wedges!

Ingredients

For the Veggie Burgers:

1 can blackbeans, drained and rinsed

1 cup cooked brown rice

1/2 cup breadcrumbs

1/4 cup chopped onion

1/4 cup chopped bell pepper

1 clove garlic, minced

1 tsp ground cumin

1/2 tsp smoked paprika

Sal & pepper to taste

1 tablespoon olive oil


For the Sweet Potato Wedges:

2 medium sweet potatoes, scrubbed and cut into wedges

1 tablespoon olive oil

Salt & pepper to taste


For serving:

4 whole wheat hamburger buns

Sliced tomato, lettuce and onion

Tomato sauce or mustard as desired

Preparation

  • Preheat the oven to 400F (200C)


  • In a large bowl, mash the black beans with a fork or potato masher until they are mostly smooth but still have some texture.


  • Add the cooked brown rice, bradcrumbs, chopped onion. chopped bell pepper, minced garlic, cumin, smoked paprika, sal and pepper to the bowl conaining the mashed black beans. Mix through.


  • Form the mixture into 4 patties


  • Heat the oil in a lrge frying pan over medium heat. Add the veggie burger patties and cook for 3-4 minutes per side until browned and crispy.

  • Meanwhile toss the sweet potato wedges in olive oil, salt and pepper. Spread the wedges in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelised.


  • To assemble the burger, place a pattie on the bottom half of each burger bun. Top with sliced tomato, lettuce and onion adding tomatoe sauce or mustard as desired. Serve with the roasted sweet potato wedges.
