Self-Nurturing Red Lentil Soup!

Ingredients

1-tablespoon olive oil

1 med-size onion

3 garlic cloves, minced

2 celery stalks, chopped

2 carrots, chopped

1-tsp ground cumin

1-tsp ground coriander

1/2-tsp smoked paprika

1/4-tsp cayenne pepper (optional)

1-cup red lentils, rinsed and drained

4-cups vegetable stock or water

1-can diced tomatoes

salt & pepper to taste

fresh parsley or cilantro (coriander) for garnish (optional)

Preparation


  • Heat the olive oil in a large pot over medium heat. Add the onion and suate for 5-minutes until softened

  • Add the garlic, celery and carrots and saute for another 5-minutes until the vegetabes are tender

  • Add the cumin, coriander, smoked paprika and cayenne (if using) and stor for 1-minute until fragrant

  • Add the lentils, vegetable stock or water and diced tomatoes. Bring to a boil, then reduce the heat to low and let simmer for 20-25 minutes until lentils are tender and the soup has thickened.

  • Season with salt & pepper to taste

  • Serve hot, garnished with fresh parsley or cilantro (coriander) if desired.
